Cheddar may be called vintage if it has matured for over 12 months. It finds its origin in Somerset, England. Good Cheddar is firm and, when aged, slightly crumbly in texture, yet mellow in character; it is rich with a tendency to melt in the mouth, the flavour full and fine, a bit earthy with hints of hazelnut. This crowd-pleaser has inspired us to bake a biscuit which will also be adored by a lot of people because of its rustic and traditional character.
